Cooking Instructions

  1. First chop all the vegetable, do not cut them into very small pieces. In 1 tablespoon warm milk soak saffron strands. Fry chopped onion till crispy.
  2. Heat 3 tablespoon oil in a pan, now add sliced onion, 1-2 green chilies long cutted, ginger-garlic paste, 4-5 black peppercorns, 1/2 teaspoon cumin seeds, green cardamom, 1/2 chopped potato, 1/4 cup chopped carrot, 1/2 chopped cauliflower stir all well till 4-5 minutes.
  3. Now add 1/4 cup chopped french beans, 1/4 cup fresh or frozen green peas and salt. Now cover all vegetable until cooked or for 5-7 minutes.
  4. After vegetable cooked add 1/2 teaspoon red chillies, 1/8 teaspoon turmeric powder, 1 teaspoon cumin-coriander powder and 1/4 teaspoon garam masala powder and stir all well.
  5. Add 1/2 cup beaten curd and 2-tablespoons chopped coriander leaves. Mix well and cook for some time. Turn off the flame and keep gravy aside.
  6. For preparing rice, soak rice for 15 minutes and drain all water. Boil 3-4 cup of water in a deep pan and drained rice, 1 black cardamom, 2 green cardamoms, 2 cloves, 1 small piece of cinnamon, 1 small bay leaf and salt.
  7. Boil for 7-8 minutes until rice 85% cooked. Now transfer cooked rice to colander and drain excess water.
  8. Now we will make layers of biryani, make two rice and two gravy layers. Add half quantity of gravy in a deep pan then add half of the rice over gravy and spread evenly.
  9. Now sprinkle half of the saffron mixture fried onion, chopped coriander leaves and also mint leaves over it. Do same for third and fourth layers.
  10. Pour 2 tablespoon of ghee on sides of rice and cover the vessel with lid. Heat the tawa over low flame and then put the vessel over it and tell it cook for 12-15 minutes to add dum in vegetable biryani.
  11. Transfer it to serving plate, serve it hot with raita.
